No Bake Power Balls

Ingredients

  • 1 cup oatmeal (dry)
  • 2/3 cup shredded coconut
  • 1/2 cup peanut butter (sugar free)
  • 1/2 cup flax seeds
  • 1/2 cup semisweet chocolate chips (optional)
  • 1/3 cup agave nectar or honey
  • 1 tablespoon chia seeds (optional)
  • 1 tablespoon pumpkin seeds (optional)
  • 1 teaspoon vanilla

Directions

  1. Stir all ingredients together in a large mixing bowl until thoroughly mixed.
  2. Once chilled, roll into balls.
  3. Store in an airtight container or jar.
  4. Keep in refrigerator for up to one week.
